This past Thursday I tried a new recipe for carrot cake that turned out really well.
Instead of baking a whole carrot cake, I made cupcakes from my concoction based on this recipe.
My roommate liked them so much she called them “CRACK” cakes.
They feature my signature vanilla buttercream icing, pecans, raisins, coconut and of course carrots.
